So I was wondering, is it possible to use a high-speed switch placed between the turbine and the load to make an alternator act like it's "smaller" at lower wind speeds by switching the coils on and off rapidly, thus disconnecting them from the load and reducing the loading on the blades?

Would it even work? Would it cause lots of noise/vibration? Would it negatively affect alternator efficiency? Would it damage the load? Would it cure HIV? Would it cause the stock market to drop? etc. ad infinitum.

What you are describing is simillar to the function of a buck converter. If you were not aware, series capacitance in the output AC leads, performs a similar function. I now use this as part of the arrangement on my F&P windmill to better match the loading to the wind energy. There are real problems with RFI etc with high speed switching and long cabling.

Yes, it is possible.
This is Stage 1 of my MPPT design as presented Here.Some errors are present in the suggestion but the concept remains the same, and your queries are at a conceptual level only. Further work is being done on this arrangement as we speak, in the construction of a 12 volt prototype.
was working fine... til the smoke got out.
