hi guitarbaby

its might be easier maybe to work it out thinking in volts and amps , not just the watts

if it was say a 24v mill rated at 400w thatd be about 16 amps of juice

it,d be good to pick a controller rated at a little higher wattage to give a bit of headroom..maybe one rated to controll 500w or 600w (about 20 amps or over ) at 24v

some more expensive controllers (often much higher wattage) can be pre set to work at different   voltages    which is nice if for some reason you change your mill

just a few thoughts

I would concur with niall1...think volts and amps. I would go 25% over for the protection
cheers

I always reckon that peltier units are a real great idea...several of them hooked up will freeze your beer nicely :)
Anyways, seriously - I am serious about the peltiers too - find out how much amps you expect to waste at what voltage and and then get the wire specs (length, diameter etc) to make your "heater element".
Don't ask me the exact specs as I will give you the minimum figures to fry eggs and bacon with
I assume your controller is appropriately fused and protected from your dump load...otherwise you might have rig some stuff up before you wire an element or something up.
Cheers
